Post Run Supercharged almond&cranberry Muff-ookie!!-(not quite a muffin not quite a cookie!!) YUM

So heres a great energy replacer for after your run, wholesome and filling. Let me know what ye think.

Ingredients

1 cup wholewheat four

1 cup wheatgerm or wheatbran

pinch of salt

1/4 tsp baking soda

3 1/2 tbsp unsalted butter melted

1/4 cup of splenda

1/4 cup of brown sugar (optional on either sweetners or both depends on how sweet you like it, I usually just do splenda&apple sauce)

1/2 cup apple sauce

1 egg

1/2 cup cranberries

1/2 cup almonds chopped

preheat oven to 350 F

pam spray a baking sheet

combine all ingredients in a bowl EXCEPT almonds and cranberries

Mix everything together and when dough is creamy add in almonds and cranberries.

Spoon dough onto baking sheet 2 inches apart approx and 1 teaspoon big. Bake for 15-20 mins until golden.

Cool for 2 minutes then enjoy.

They freeze great too so pop them in the freezer and before your long run or race pop out some and your good to go.
